2oz Pisco
1oz Lime juice
0.75oz Simple syrup
1 egg white
Chuncho bitters (3-4 dashes to garnish)
Pour all ingredients, but the bitters in a shaking tin. Realize a strong 'dry-shake' to make some foam. Add some ice and do a strong shake. Pour all ingredients in a coup. Serve UP, and to garnish use the chuncho bitters (also Angostura bitters would do just fine).
